Our business model was initially designed to meet the needs of supermarkets, hotels, resorts, and meat processing facilities. Over the years, we realized that we were driving by many potential customers in restaurants, colleges, hospitals, etc. Through word of mouth referrals and some targeted marketing efforts we have broadened our client base substantially. Growth requires planning, flexibility and improving overall efficiency. To better meet these needs, we have developed a simple menu of service options to use as a starting point for developing an affordable, custom tailored plan to service and replace your cutting boards. With normal daily use, cutting boards are cut, scraped, exposed to wide temperature swings and ravaged by harsh chemicals. Most people mistakenly believe that by washing them at night and using an approved sanitizer periodically throughout the day will keep them clean and sanitary – IT WILL NOT! Plastic cutting boards are, by design, made up of densely packed polymers. When a sharp knife cuts into the surface, the “surface tension” along the cut is released; creating a gap in which the protein of whatever is being prepared is allowed to enter an otherwise non-porous surface. Water, detergents and sanitizers can neutralize most of this contamination but, not all of it. The danger area exists at the deepest part of the cut. This area, measured in microns (1 micron = one millionth part of a meter), is where micro-organisms reside unaffected by water, detergents or sanitizers (even under pressure). Since liquid cleaners cannot reach this microscopic point, the clean/kill ratio cannot take place.

Daily cleaning and sanitizing does an excellent job of surface cleaning and sanitizing. “Block whiteners” can also help whiten them giving the visual impression of a clean surface. Meanwhile, the virulence of the micro-organisms down deep in the cut is unaffected by this surface cleaning activity. This is often observed by the naked eye – after washing and sanitizing at night, the boards appear to be clean. However, the following day, the boards appear to be significantly more discolored. This is caused by the replication of millions of micro-organisms overnight. The cutting boards are literally “alive.” If any of these micro-organisms are pathogenic you run the risk, as you drag a knife across the board and through your product, of contamination.

A number of factors must be evaluated to answer this question. The most obvious indicator that a board needs to be resurfaced is discoloration or stains that cannot be removed. There are other more subtle clues that we will teach you to identify as we work with you to develop a program for regular maintenance and inevitable replacement of your cutting boards.

NO! Chlorine breaks down the molecular structure of High Density Poly Ethylene (HDPE), the stuff that cutting boards are made of. It oxidizes the plastic causing it to flake off in tiny pieces, reducing the board’s lifespan. Additionally, it leaves a sticky film that is near impossible to clean off. This acts like a magnet for dirt and grime and therefore compounds the problem.

ABSOLUTELY NOT! It is a waste of time and money. Don’t be ripped off! Remember the goal of resurfacing is to restore the cutting board to a state in which sanitation can successfully occur. There are a handful of companies that claim to “resurface” cutting boards by sanding them. Sanding is an abrasive process that does not remove contamination. Instead, microscopic mold, bacteria and other food borne contamination are actually pushed deeper into the hot, soft surface. Small pieces of sand or “micro-grit” impregnate the cutting board further contaminating it with foreign material. Conversely, plastic sticks to the sandpaper and can migrate from board to board, creating the potential for cross contamination between your boards or any other boards that have been processed before! Finally, when finished, the sanded surface of the cutting board has a peach-like, fuzzy feeling. This is caused by micro grooves that the sanding process leaves. These microscopic grooves are still filled with contamination that sanitizers cannot reach. Ironically, this is the exact same problem that you were trying to solve in the first place. In other words, SANDING IS A SANITARY SCAM! STOP WASTING YOUR MONEY. No. All service is done on-site in our mobile workshop.

No. We begin by resurfacing all of the boards that are not being currently used. Then we rotate these boards back into service and take the others out. We always strive to meet your needs and minimize our presence.

We usually take about 5 – 10 boards out to be resurfaced at one time. Service takes approximately 30 to 60 minutes per load. Overall service to a facility can be from one to eight hours depending upon how much resurfacing is needed.
Service frequency is on average once a year, more frequently if boards are used more intensely.

During an average resurfacing, approximately 1/32” – 1/16” is removed in total (this includes both sides). So if you started with a 3/4” thick cutting board, the average board could be resurface about 5 times before it was reduced to ½” thick.

Resurfacing is approximately one-third the cost of buying a new HDPE cutting board. Plastic prices are linked to petroleum prices – as oil prices have risen so too, have plastic prices. Even with the recent decline in fuel prices, the cost of plastic remains higher than it was before the fuel spike. This, however, has made resurfacing an even greater value.
